I think I found my new favorite salad dressing and sauce! I generally have to eat peanut sauces at restaurants only because we have a child with a peanut allergy. Swapping out the peanut butter for sunbutter was not even noticed!
The best part was I had everything I needed already in my pantry. 🎉
Salads are actually one of my most loved foods and I’m currently playing around with an app that shows me what vitamins, minerals and nutrients I’m getting. So my focus is on hitting my nutrients during the day. (If you know me you know that macros are not my jam. I’ll give you the basics but will send you to people who thrive in macros if you want to geek out on them! I may be a health coach in Wisconsin but I stick to what lights me on fire and its not macros!)
This one was so colorful and full of nutrients. Dressing was on the higher side of fat so not something you want to go super crazy but the flavor was off the charts!
Thai inspired peanut free dressing.
1/4c sun butter
Juice of one lime
3T soy sauce
2T sesame oil
1T or to taste garlic chili sauce
Salad
Romain lettuce
Red cabbage
Carrots
Cucumber
Red pepper
Cilantro
Green onion
Blanched green beans
Sesame seeds
